SEATONFIRE DRINKING FONDUE RECIPES

#1. CHILLI CON CARNE y CHILLI CHOCOLATE
SERVES 6
ok so this seems like hard work, but it's easy, incredibly delicious and can be served as dinner with rice and salad, used in taco's with chopped lettuce or as a dip with corn chips.
Ingredients: 3 tablespoons olive oil, 4 onions chopped, 2 cloves garlic, 2 teaspoons salt, 1kg ground beef (omit for vegetarian) 2 cans (400g) tomatoes or 4 fresh tomatoes. 2 red chilli chopped, 1 capsicum chopped, 4 teaspoons ground cumin, 1/2 teaspoon pepper, 2 teaspoons oregano, 2 bay leaves, 2 cans red kidney beans, 35 grams of Seatonfire drinking fondue.
Method: Brown the beef, onion and garlic in the olive oil. Stir in all other ingredients except beans. Add more chilli, salt or spices if required. Simmer on low heat for 20 minutes, stirring occasionally as the mixture will thicken. Add beans to cook till heated through. Enjoy!

#2. CHILLI CHOCOLATE MOUSSE
SERVES 4
The simplest mousse recipe we've made and it is stunning. Best to make the day ahead.
Ingredients: 1 cup heavy cream, 2 egg whites, 1 tablespoon honey, 2 teaspoons caster sugar, 1 teaspoon vanilla extract, 1/4 cup Seatonfire drinking fondue.
Method: Stir together sugar, honey and cocoa in a mixing bowl. Beat on medium speed until thick. In a seperate bowl whisk egg whites until firm peaks form. Fold together with chocolate mixture gently and spoon into individual serving glasses or one serving bowl. Chill covered for 2 hours minimum, overnight best. You can add 5 chopped mint leaves to the chocolate mix.

#3. CHILLI CHOCTINI
2 cocktails
Ingredients: 2 parts Vodka, 2 leaves fresh mint, 1 part sugar syrup, 1 tablespoon drinking fondue, ice, cocktail shaker
Method: Mix all ingredients in a cocktail shaker, shake, strain, sit down, start a funny conversation and enjoy

#4 CHICKEN WITH MOLE NEGRO
Yield 4 serves
ok this is incredible, sounds weird with akk these ingredients, but incredible, please try it and not tell your dinner guests there is chocolate in it until they applaude your cooking!
Ingredients: 3 tablespoons corn oil, 8 whole chicken legs with thigh attached, 2 cups salsa or tinned tomato, 1cup chicken stock, 1 red capsicum chopped, 6 sun dried tomatoes, 4 tablespoons raisins, 4 tablespoons peanut butter, 1 corn tortilla or 2 cups corn chips, 1 teaspoon ground cumin, 1/2 teaspoon ground pepper, 1/2 teaspoon ground cloves, 1 teaspoon salt, 60g Seatonfire drinking fondue, 3 tablespoons toasted sesame seeds.
Method: Cook the chicken in oil until brown. In a blender add all ingredients except sesame seeds and blend on high speed. Add to chicken and simmer in low heat for 1 hour adding more salt or spices if needed. Thats it!! Serve with salad and cous cous or rice.
